New take on Smore`s at home
My daughter saw a recipe for smore's made at home and my husband decided to change it up. So glad he did because these are absolutely delicious! I hope you enjoy them as much as we do!
Ingredients
Beat
1 cup (250ml) shortening
1 cup (250ml) packed brown sugar
1/2 cup (125ml) granulated sugar
2 eggs
1 1/2 tsp (7ml) vanilla extract
mix well
Stir in
2 cups (500ml) all-purpose flour
1 tsp (5ml) baking soda
1/2 tsp (2ml) salt
Mix well
(this is a cookie dough recipe without the chocolate chips)
2 bags of chocolate chips
2 bags of mini marshmallow's
Directions
Pre-heat oven to 375F
1) You will need muffin stones or tins. I use muffin stones. Make sure you use some butter or flour to rub on the sides of the muffin pans so the dough doesn't stick to it, makes it easier to remove when they are baked. We used flour. But would use butter next time.
2) The dough will be sticky, so you want to add flour until the dough becomes firmer to work with.
3) Roll dough into a good size ball and place in the greased muffin pan and push down with a glass or a tart shaper to make a pastry shell. Bake the shells first for 10 to 12 minutes or until lightly golden.
4) Once the shells are baked place enough chocolate chips to cover the bottom of the shell. You can always add more or less depending on how much chocolate you want in them.
5) Then fill the rest of the pastry shell with mini marshmallows.
6) Bake in the oven until the marshmallows are golden brown. Each oven varies.
